8 Foods You Should Freeze in an Ice Cube Tray

How to prevent waste in the kitchen with an ice cube tray.

Do you want to know one of my very favorite kitchen secrets?  The one secret that I use multiple times each month to help me save money and prevent food waste???  It has everything to do with an ice cube tray!  Instead of tossing excess foods, freeze those foods in an ice cube tray to extend the life and use at a future time.  There are many different foods you can freeze in an ice cube tray, truly the skies the limit!

Why Freeze Food in Ice Cube Trays?

Freezing foods in ice cube trays is not only easy, but it will save you a lot of money in the long run!

Many recipes call for half a can of this or a few tablespoons of that Tossing this leftover food aside may not feel like a big deal at the time, but when it is continually done over and over again the amount of waste adds up, which in turn means more money spent.

Instead of throwing the extra leftovers in a can away (which also means throwing money you spent away), freeze them in an ice cube tray. 

An ice cube tray is the perfect spot for freezing leftovers because the small cubes make defrosting easier and faster than when it is frozen in a large chunk.  These frozen ice cube leftovers are perfect for those quick meals!

How to Freeze Food in Ice Cube Trays

Freezing leftovers in an ice cube tray is so easy to do!  I personally use these trays from Amazon.  You can buy a fancier version, but I’m all for cheap and simple!

  1. Simply fill each ice cube tray with the food you want to freeze.
  2. Stick the tray into the freezer for 1-2 hours until each cube is frozen through.
  3. Pop those cubes out of the tray and into a freezer bag (I use these!).
  4. Get as much air out of the bag as possible by slowly pushing it out and then quickly zipping it shut.
  5. You can now pull out the cubes and use as needed in recipes.

These cubes will stay good in the freezer for 3-6 months.

When you use your cubes in a recipe keep in mind that each cube in a standard ice cube tray is about 2 Tablespoons (1 ounce).  This makes 2 cubes equals 1/4 cup.

What Foods Freeze Well In Ice Cube Trays?

Here are a few suggestions of leftovers that will freeze great in ice cube trays!

1.  Stock

Do you have some leftover Chicken Stock?  Maybe from a homemade stock or from a box?  Either works!  Simply fill your ice cube tray up with the stock and freeze.  These stock cubes are great to use for soups or in sauces.

2.  Yogurt

Another great food to freeze in ice cube trays is yogurt.  If you find yogurt in your fridge getting close to the expiration date, pour it into ice cube trays and freeze it for later use.  These frozen yogurt cubes are perfect for smoothies or oatmeal for added protein and creaminess!

3.  Cream

Cream will stay fresh in the fridge for about a month, but if you have cream that is getting close to expiring you could freeze it in an ice cube tray for later use.  The frozen cream is perfect to use when making butter, ice cream, sauces, soups, or whipped cream.

4.  Pumpkin

My Pumpkin Cookie recipe (which you can find in my cook book here) calls for about 3/4 can of pumpkin puree.  Instead of throwing away the extra 1/4 can of pumpkin I have started freezing it in cubes, and loving it! 

These pumpkin cubes are perfect to add to smoothies or protein drinks, but can also be used in all of your pumpkin baking!  If you have a baby at home you can even use it to feed your little one!

5.  Pesto

Another food that will freeze well is pesto!  Freezing pesto in an ice cube tray is a great way to save it for use in pasta recipes, eggs, sauces, or salad dressing.  The cubes are so easy to pop out of the freezer to use in a quick fix!

6.  Tomato Paste

Most of my recipes requiring tomato paste only need 1-2 Tablespoons, making the majority of the can go to waste. 

Instead of throwing it away, I have learned to freeze that excess in ice cube trays to use for later.  These freeze really well and are perfectly proportioned for my stew recipes!  Yay!

7.  Lemon Juice

You can even freeze fresh squeezed lemon juice, or bottled lemon juice!  The ice cube portions are perfect for drizzling over salads, using in baking, lemonade or for making buttermilk substitute.

8.  Herbs in Olive Oil

Don’t let fresh herbs go to waste.  Instead of tossing out fresh herbs, use an ice cube tray to preserve them.  All you have to do is place the herbs (rosemary, thyme, sage, and oregano work best) in an ice cube tray, filling it about 3/4 full, and fill the rest of the cube with olive oil.  Freeze the tray following directions at the top of the article.  You can pull these cubes out of the freezer to use in soups and stews.

In Conclusion

The next time you have a small amount of food leftover and you don’t know what to do with it, consider freezing it in an ice cube tray!  This kitchen hack is so easy and a great way to save some pennies!

Overcoming the Fear of Starting a Blog

Truthfully, I use to be terrified of starting a blog.  Here’s my story of how I came from terrified to confident within a matter of minutes.

I have been a stay at home mom for the past 14 years.  This is my dream job and I wouldn’t trade this time with my kids for anything.

But, the past few years I’ve been getting this itch.  An itch telling me that maybe it’s time to start spreading my wings a little.

I thought about many different options; I knew I wanted to continue being home with my kids, but I also wanted to start contributing to the finances and pursuing a few of my passions.

First, I started teaching piano out of my home.  I loved it, but ultimately decided it wasn’t the best fit for my family at that time.  Then, I started brainstorming other side hustles ideas.  The thought of blogging kept coming to my mind over and over again.

I’ve always been intrigued by the idea starting a blog because of my love for writing.  Writing is my therapy, it is the way I express myself.  It is something I have always enjoyed and put my heart into.

But, I kept telling myself that blogging wasn’t right for me.

Why?

Well, because I thought it was “weird.”  It wasn’t a “normal” job and so I didn’t even consider it.

But, the truth is I was actually just scared.  Scared of what others think of me and scared of failing.

See, I’m not the “typical” blogger (or at least what I thought was typical at the time).  I don’t take beautiful pictures.  I’m not in the least bit trendy or crafty.

I am just me. Simple, plain, fairly boring me.  I truly didn’t think I had anything to offer this great space we call the internet.

For years I allowed this negative self talk into my life.  Every time the idea of starting a blog crept back in, I reminded myself why that wasn’t an option and quickly moved on.

Until.

One day as I kept trying to come up with ideas of how I can earn a living from home, the blogger idea crept into my head (again!).  And then it hit me.  Maybe, just maybe my simple, plain, fairly boring yet so SWEET and very FRUGAL life might be helpful to somebody somewhere.  Maybe, I do have something to offer this space.

Within 10 minutes I had a blog name and Instagram account set up.  I still felt a little hesitant, so I decided to set up an Instagram account first, start sharing my life and just see what happens.

And guess what happened?  People seemed interested, and I found something I truly enjoyed.  Being able to help others find control of their finances and save money brought so much joy into my life.

I set up my blog a couple of months later and continue to plug away at it every day.

For years I thought I could “never” be a blogger and then within a matter of minutes I was planning a blog.

So what made the difference?

I can narrow the change down to 2 things.

1.My Mindset

My mindset was the number one thing holding me back.  When I told myself that I couldn’t be a blogger, I believed it and in return became it.

I truly believe that we are who we think we are.

Once I started telling myself that I was capable, I became capable (funny how that works huh?)!

If you keep talking yourself out of starting a blog (or anything!), change that mindset.  Focus on positive self talk and don’t allow any of the negativity into your brain.  You will in return find much more confidence and happiness.  Promise.

2.  Taking Action

I could have spent weeks and months thinking about different blog titles, researching the smartest techniques, and planning blog articles (which, as a planner sounds typical for me).

However, I instead chose to begin immediately.  The idea came to my heart and head and I took action as soon as possible.

Sure, it wasn’t easy!  There were many things (more like everything tbh) I didn’t know and I ran into many road blocks along the way.

But, I’m trying and that is what matters.  If I never would have taken that first step forward, than I never would have been able to experience this fun world of blogging.

Don’t let fear hold you back.  Take the steps forward to achieve your goals and plans, you will probably stumble and fall along the way….but that is just how we learn!

Last year I bought the Genius Bloggers Toolkit.  For months I refused to spend money on any blogging courses.  I felt confident I could figure it out myself.  But when I finally knew that it was time to take action, I decided to take the plunge and invest in my blog.

I am so glad that I finally took action!  This has been my best journey yet!

 

10 Things I Wish I Had Known When I Started Blogging

I have officially been blogging for 1 1/2 years now (yay!), but honestly I still feel like a beginner!

One of my most asked question on instagram is “How do you start a blog?”  This question always surprises me.  Probably because I’m still so far from being a “pro blogger.”  I’m just little ol Melanie, doing my best to navigate this blogging world day by day.

The question always gets me thinking about those first few blog posts I made.  I really had no idea what I was getting myself into!  But, I kept pushing publish and kept studying and my blog has evolved and grown because of it.

So today, I want to give some advice to anyone exploring the idea of starting their own blog.  Here are my 10 Things I Wish I Would Have Known When I Started Blogging!

1.  Blogging is Hard.

There is just no way around this cold hard fact.  Sure, it’s fun to share your heart through writing.  Yes, it’s exciting to connect with others around the world.

But, there is so.much.more.to.blogging.than.blogging. For reals.

There is the “techy” part, the marketing, picture editing, legalities, and so on and so on.  This can all get a little confusing at times, and it is very very time consuming.

I think the hardest part though is the moments you fail.  You spend hours and hours, pouring your heart into this world and then nothing happens.  Nobody visits your blog, your words seem to not matter and it feels like no matter how hard you try….you will never succeed.  It’s hard!

I’m not trying to be a downer, but I am trying to be honest.  Blogging is so much more than writing cute articles, and it’s not easy!  It’s a lot of work!

2.  Start With Self Hosted.

When I first started researching blogging info I kept hearing the advice that I need a “self hosted” site.  But, being the somewhat prideful (did I really just admit that?!?) person that I am; I decided not to listen to the advice of all of the experts! (seriously rolling my eyes at my pride right now)

Instead, I decided I would save a few bucks (it’s always about money with me) and take the “easy route”.  I went ahead and set up a blog on wordpress.com.  It felt legit, it looked fairly straightforward, so I went for it.

And of course I was wrong!  This platform limited me and my site in so many ways.  I finally swallowed my pride and switched to a self hosted platform, I am currently using site ground, and it’s made all of the difference!

I have so much more control over my blog!  The change has been night and day.  Site ground has amazing customer service, the price is affordable and I haven’t had a problem since switching.

Do yourself  a favor and start your blog on a self hosted platform!  I wish I would have listened to all of the experts to begin with!  .

3.  Blogs Cost Money.

You will read countless blog articles telling you that blogs are really cheap to start.  Which, technically is true.  It really doesn’t cost a ton of money to purchase your site ground subscription and get the blog started.

BUT!

As you keep trying to find ways to grow your blog business, you will keep noticing the investment gets bigger and bigger.  You will probably want to buy a blog design, a email list subscription, stock photos, etc.

It still is significantly less to start a blogging business than an alternative business, but it does cost more money than I had initially thought.

4.  Not all Email Servers are Created Equal.

When I started blogging I knew I needed an email list, so I signed up for the cheapest server I could find.  Which, in all honesty is a smoking deal.  It was free to use, as long as my email subscribers were under 2,000 (I really like free!).

But, this email server drove me crazy.  It was not user friendly and I struggled figuring out how to use it.  I spent countless hours of my precious time trying to learn the system.

I eventually had more than 2,000 subscribers and couldn’t be on the free plan anymore.  I knew this was the time to switch servers.  I had heard so many great things about Convertkit, so I made the big move.  This was fairly painless to do, and only took about an hour to get it all set up.

It was one of the best decisions ever!  Convertkit is amazing!  It’s user friendly and easy to understand and it has saved me so much time.  Yes, I’m paying more now, but for me, it has been worth it!

5.  Be Patient.

Sure, you will hear a few blog instant success story, but this is not the norm.  For most bloggers it takes time (lots of time!) to see your blog get traffic.  In some cases it might even take years!

I have been blogging for a year and half and I still haven’t learned how to get people coming to my blog.  At times this frustrates me and I wonder if I should just give up.

However, I keep plugging away at it though, and I keep trying to be patient.  I recently had a blogging friend share that she has been blogging for over 2 years and finally reached a huge blogging milestone.  Stories like this give me hope that if I keep being patient and keep improving I might also see some success (cross my fingers!).

6.  Blogging Friends are Great Resources.

Two years ago I had no idea just how wonderful blogging friends are!  They have honestly been the best resources and help mates as I have tried to navigate this world.

Every single person I have reached out to (seriously, everyone) has been more than happy to answer my questions, point me in the right direction and give me support.

If you want to start a blog, don’t be afraid to reach out to other bloggers to ask questions and get advice.  My door, or inbox ;), is always open!  Another great place to look is facebook.  Join a few blogger facebook groups.  These have loads of information!  We all understand what it’s like to begin and truly want to see others succeed.

7.  SEO is Important.

I had no idea what SEO was until I started blogging.  And to be completely honest with you…..I didn’t really understand it until just a few months ago (I’m a slow learner).

I kept hearing bloggers use the term SEO, and I knew it was important.  But it was really confusing and I just didn’t want to take the time to understand it.

This was a mistake!  I should have made SEO one of my first priorities when I started blogging.

If you’re as clueless as I usually am, here’s a quick run down for you!  SEO stands for Search Engine Optimization.  This is how you get traffic from search engines to find your website.  You want your site to come up when someone googles a question or topic.  This is done by using certain keywords in your articles.

8.  Tailwind is a Lifesaver.

Tailwind has been my most recent investment, and it has saved my sanity!  Tailwind is a program that will automatically pin your pins on pinterest for you.  Seriously awesome.

Instead of having to spend hours each day on pinterest, Tailwind will do all of the work for you!  I spend about one hour each week scheduling my pins on Tailwind, and then I can just forget about pinterest for the rest of the week!  Best invention ever!

9.  Don’t Overthink It.

If you are feeling the urge to start a blog, just do it!  I spent a lot of time worrying about every step of the blogging process.  Hours upon hours were spent editing pictures, making pins and researching blogging tips.  I worried so much about making a mistake, but in the end I hurt myself by holding back.

I wish I would have jumped in feet first rather than dabbling here and there.  Starting a blog can be scary, but don’t let that fear hold you back!

10.  Do Not Use Free Photos

A big part of blogging is good photography.  Unfortunately, I am not a great photographer.  Fortunately, there are many wonderful photographers out there!

When I first started my blog I insisted on only using free photos.  Well, the more I learned about blogging the more I realized just what a huge mistake that was.  You see, many of the “free” photo sites are actually stolen images uploaded without permission.  Because of this there have been many bloggers sued for using photos without the copyright.

Once I learned this important fact I had to go through the tedious task of changing out all of my free photos to paid photos.  It was time consuming and I wish I had paid for the photos in the first place!

I personally use Deposit Photos and am so pleased with them.  There are thousands of pictures to choose from and they are beautiful!

11.  It’s The Best Adventure Yet!

When I began blogging I had no idea what I was getting myself into.  I didn’t know if I would like it, or hate it.  I just knew that I wanted to try.

It turns out I absolutely love blogging.  It has been an outlet for me to express myself and to meet new people.  I love having this project to work on while my kids sleep.  It has brought a lot of joy and confidence into my life, and I can’t wait to see what’s coming next!

Homemade Graham Cracker Recipe

How to make whole wheat graham crackers.

I have a rule.  A little grocery shopping rule to help me stay in my grocery budget.  I am only allowed to go to the grocery store once a week.  If I run out of something earlier in the week or if I realize I have forgotten something, well that’s just to bad, I have to wait. I have learned to do without and to use what I have on hand.  This homemade graham cracker recipe has saved me time and time again.

This past weekend my kids ate through all of my store bought snacks.  Does anyone else’s kids do that?  I thought I had bought plenty snacks for the week, but we are all out.  I still have two more days until my grocery day.

So today I decided I needed to whip up a few homemade snacks to help tide my kids over until grocery day.   The more food you make from scratch, the more money you will save.  This graham cracker recipe has been a favorite in our house for years.  It is fairly easy, somewhat healthy, and 100% delicious!

Easy Homemade Graham Cracker Recipe

The first thing you need to do is turn your wheat berries into wheat flour.  I always do this in my blendtec.  You will need 1 1/2 cups of wheat flour.


Next, combine the wheat flour, 1 cup white flour, 1/2 cup brown sugar, 1 tsp cinnamon, 1/2 tsp salt, 1 tsp baking soda in a large mixer.

 


Cut a cube of butter into small pieces and add it to the flour mixture.  Mix well until it turns to crumbs.

 


Add 1 tsp vanilla, 1/4 cup honey and 1/2 cuo water.  Mix well.

 


Place dough onto a floured surface.  Roll it out into a 1/4 inch thick rectangle.  Cut graham crackers out with your favorite cookie cutters.  We’ve used all shapes and sizes.  It’s fun to mix things up!  Let your kids choose their favorite!

 


Place the graham crackers onto a cookie sheet and bake the in the oven for 10 minutes.  Enjoy! 

Hopefully my kids can last on graham crackers and fruit until grocery day!  🙂

Homemade Graham Crackers

Ingredients
  

  • 1 1/2 cup wheat flour
  • 1 cup white flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 cup butter chilled and cubed
  • 1 tsp vanilla
  • 1/4 cup honey
  • 1/4 cup water

Instructions
 

  • Heat oven to 350 degrees.
  • Combine flours, brown sugar, cinnamon, salt and soda in mixer.
  • Add butter and mix slowly until it turns to crumbs.
  • Add vanilla, honey and water.  Mix well.
  • Turn onto a floured surface.  Roll out into 1/4 inch thick.  Cut out with your favorite cookie cutters.  We've used all shapes and sizes.  It's fun to mix things up!
  • Bake in oven for 10 minutes.  Enjoy!
