Oatmeal Muffins Recipe

How to make these easy oatmeal muffins.

Muffins are one of my favorite things to make from scratch.  They are just SO easy!  My kids love to eat them for breakfasts, lunches and after school snacks.  Plus, most muffin recipes are super cheap to make, and we all know that I love anything frugal friendly.  I’m so excited to share my easy oatmeal muffin recipe with you.  They are so delicious and made with whole wheat flour, which makes for happy kids and happy moms!

Quick Oatmeal Muffins Recipe

To start making these delicious muffins you will want to gather all of your ingredients.  Don’t worry, I’m betting you have them all in your pantry already! 

You will need:

  • 1 cup Buttermilk (if you don’t have buttermilk just mix one tablespoon of vinegar with 1 cup of milk and let it sit for a few minutes)
  • 1 cup Oatmeal
  • 1 Egg
  • 1/2 cup Brown Sugar
  • 1 cup Whole Wheat Flour
  • 1/2 tsp Baking Soda
  • 1 1/2 tsp Baking Powder
  • 1/4 cup Vegetable Oil

The first step to this easy oatmeal muffin recipe is to soften the oatmeal.  This is super easy to do!  All you have to do is put your oats in a large bowl and pour the buttermilk on top.  Let this mixture sit in the bowl for 5 minutes. 

 

After the five minutes is up add the egg and brown sugar to the bowl.  Mix it all together well.

Next, stir in the flour, baking soda and baking powder, mix the batter again.

 

 

Lastly you will add the oil and mix it well for one final time.  

Spoon batter into greased muffin tins.  Fill them 2/3 full.

Bake the oatmeal muffins at 400 degrees for 18 minutes or until golden brown.  These taste best warm with butter and jam on top.

  • 1 cup oatmeal

Method

  3. Add oats to a large bowl.
  4. Pour buttermilk over oats.
    Let it stand for 5 minutes.
  5. Add egg and brown sugar.
  6. Mix batter well.
  7. Stir in flour, baking soda, and baking powder.
  8. Mix again.
  9. Pour in oil.
  10. Mix one last time.
  11. Spoon batter into muffin tins filling them 2/3 full.
  12. Bake for 18 minutes or until golden brown.
